- There are only two courses available in practice and when I "play", I am automatically started in the Pirates course. No option to chooses a course. The game box says there are 4 courses, but I am not getting them.

Resolution:
You should be able to see all 4 courses in the Practice menu and select up to 1 course ahead of the one you've completed. The others won't be unlocked until you've completed the ones before.
The help available on the main menu explains how to unlock them.
